Going Bananas!

Somehow I ended up with 8 very ripe bananas so I knew I had to make banana bread. However 8 bananas will make much more than just banana bread so I went on a search for a second banana recipe. I found a great banana walnut chocolate chip cookie recipe on Martha Stewart Living, and they were delicious! The ripe bananas were super flavorful and turned chocolate chip cookies into banana bread bites.  Plus the recipe calls for whole wheat flour and rolled oats which give added fiber. I consider this a fairly “healthy” cookie! Here’s the recipe:

  • 1 cup all-purpose flour
  • 1/2 cup whole-wheat flour
  • 1 teaspoon coarse salt
  • 1/2 teaspoon baking soda
  • 1 1/2 sticks unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light-brown sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup mashed ripe banana (I just used two medium-sized bananas)
  • 1 cup old-fashioned rolled oats
  • 1/2 cup dark chocolate chips
  • 1/2 cup coarsely chopped walnuts

Preheat oven to 375º. Whisk together flours, salt, and baking soda in a small bowl; set aside. Put butter and sugars into the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy. Reduce speed to low. Add egg and vanilla; mix until combined. Mix in banana. Add flour mixture; mix until just combined. Stir in oats, chocolate chips, and walnuts. Using a 1 1/2-inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing about 2 inches apart. Bake cookies, rotating sheets halfway through, until golden brown and just set, 12 to 13 minutes.

Also here is my banana bread recipe. It is a combination of many recipes that I have used over the years.

  • 4 ripe bananas, mashed
  • 3/4 cup whole-wheat flour
  • 3/4 cup all-purpose flour
  • 1 stick unsalted butter, melted
  • 3/4 cup granulated sugar (I typically substitute Splenda)
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts

Preheat your oven to 350º . Combine mashed bananas and melted butter in a bowl. Add  eggs one at a time and vanilla extract. Mix well. Mix in sugar, baking soda and salt.  Mix in half of the flour at a time.  Last of all mix in the walnuts. I bake mine in three mini loaf tins for 20 minutes. I like the portability of mini loaves. I like to snack on it at work. If you use a 9x5x3 loaf tin bake it for about 60 minutes.
