I made these for our intern’s last day and everyone loved them. The peanut butter chocolate combination is always a winner.
- 6 T unsalted butter, softened
- 1/2 chunky peanut butter
- 1 1/4 C brown sugar
- 2 eggs
- 2 t vanilla
- 3/4 C all-purpose flour
- 1 t baking powder
- 1/4 t salt
- 3/4 C chocolate chips
- additional butter and about 2 tablespoons cocoa powder for pan
Preheat oven to 350 degrees. Butter an 8 inch pan and instead of using flour dust it with cocoa powder. In a bowl whisk together flour, baking powder, and salt. Using an electric mixer beat butter until smooth and add peanut butter. Scrape down sides. Add brown sugar. Beat in eggs one at a time, scraping down the bowl in between. Add vanilla.
Add the peanut butter mixture to the flour mixture and stir until blended. Stir in chocolate chips. Pour into pan and bake for about 40 minutes. When a toothpick inserted in the middle comes out with a few crumbs the bars are done.
