No-Bake Cookies

I had intended to spend my Friday night baking cookies, but when I left work and felt the thick humid air I had a change of heart. Then I remembered a cookie recipe from my mom – Chocolate Oatmeal No-Bakes! This was one of my favorite cookies growing up, and they are very simple to make.

Ingredients:

  • 2 C Sugar
  • 1/2 C Cocoa
  • 1 stick Butter
  • 1/2 Milk
  • 1 t Vanilla
  • 1/2 C Creamy Peanut Butter
  • 3 C Oatmeal

Combine sugar, cocoa, butter and milk in a saucepan. On medium heat, bring to a boil for one full minute. The full minute is VERY important. If you don’t let this boil for a full minute, the cookies won’t set.

Remove from heat and stir in the vanilla, pb, and oatmeal. Drop the cookies onto wax paper. These don’t set well if your kitchen is super humid (I had to put mine in front of my window ac unit to get them to set-up). These cookies are insanely addictive.
