Sweet and Sour

Today was day one of my 10k training. I’d never run three miles on a treadmill before, and it was hard! Thank goodness the treadmill had a tv on it. Hopefully I can get the majority of my runs in outdoors. Afterwards, I made myself a great salad with chopped hearts of romaine, an apple, chopped cucumbers, raspberries, and walnuts. I used to be so anti fruit in salads. I was missing out! I love having balsamic vinaigrette on fruit – sweet and sour is one of my favorite flavor combos.  I made the dressing myself. It’s so easy – I don’t think I’ll ever by it at the store again.

To make balsamic vinaigrette it’s equal parts olive oil and balsamic vinegar, a spoonful of dijon mustard, and salt & pepper to taste. I make mine in a tupperware that I can shake up. You could also whisk it together in a bowl.

And then I followed this green meal up with a massive bowl of cereal. My guilty pleasure! Now I think I have about 50 sun salutations ahead of me.
