Dad's Birthday Dinner

I love birthday dinners at my parents’ house. It’s comfort food galore! For my dad’s birthday, my mom made pulled pork in the slow cooker, baked beans with pineapple and ground beef, homemade apple sauce, and potatoes with green peppers and onion. I love pulled pork, and look forward to the leftovers!

I was in charge of dessert, and my dad’s favorite is pound cake. I decided to make a healthier pound cake. This recipe is from Bethenny Frankel. While the cake didn’t taste like regular pound cake, it came very close and at least I could eat a second piece without the guilt!

  • 1 stick of butter, softened
  • 1 1/2 C sugar
  • 1 mashed banana
  • 1/2 C nonfat Greek yogurt
  • 1/2 C low-fat sour cream
  • 3 eggs
  • 3 egg whites
  • 3 C oat flour
  • 1/2 t baking soda
  • 1/2 t baking powder
  • 1/4 t salt
  • 1 t vanilla extract

Preheat the over to 325 degrees and cream together  the butter and sugar with an electric mixer. add the banana, yogurt, and sour cream. In a separate bowl, whisk together the eggs and set aside. In a large bowl sift together the flour, baking soda, baking powder, and salt. Add the eggs and butter mixture alternately to the flour mixture. Lastly, add the vanilla. Pour into a greased tube pan, and bake for 1 hour or until a toothpick comes out clean.
