Chocolate and Positive Thinking

After spending a good portion of the day laying on my couch watching the Kardashians on E (there has seriously been like 8 hours those ladies on tv today), I decided I absolutely had to get off the couch and go for a run. It felt so good to have a good run and a morning of much needed relaxation. It was my first run with Abs, and I liked having a running buddy. We motivated each other and pushed hard all the way to the end. I can’t think of a better way to spend Labor Day.

For our recovery I made  chocolate strawberry smoothies. It was low-fat chocolate milk, a few handfuls of frozen strawberries, and Amazing Grass chocolate powder.  Chocolate milk helps me recover faster than any sports drink I’ve had. I guess it’s the Wisconsin girl in me!

At Whole Foods I finally found Adora! Every time I went, I couldn’t find them (or maybe they didn’t have them), but today JACKPOT!

This week I am working twenty hours at the part-time job. This means I have to plan ahead nearly all of my meals. Thursday night is the only night I’ll be at home for dinner. I saw chocolate zucchini muffins on Abby Normally a few weeks ago and decided I whip up a batch for my breakfasts and snacks this week.

  • 3 eggs
  • 1 C applesauce
  • 2 C sugar
  • 2 C shredded zucchini
  • 1 1/2 t vanilla
  • 1/3 C cocoa
  • 3 C whole wheat flour
  • 1 t baking soda
  • 1/2 t baking powder
  • 1 t salt
  • 1/4 t cinnamon
  • 1/4 t nutmeg
  • 1/4 t ground cloves

Preheat oven to 375 degrees. Beat eggs then stir in the sugar and applesauce.  Add zucchini, cocoa and vanilla. Mix well. Lastly, stir in the flour, baking soda, baking powder, salt and spices. Fill the muffin cups 2/3 full. Bake 18-22 minutes.

This little guy made a yummy pre-strength training snack!

Even though this week is going to be super stressful and busy, I’m looking forward to it. Tomorrow morning I’m going to a 6 am yoga class and a new studio opening up near my apartment. The instructor is from the studio I have been going to and I’m following her there. Once I find an instructor I like, I can’t switch! This studio also has free parking instead of $1.80/hr to park. I also plan on getting two more runs in this week, and trying out a new food cart near my office. Hopefully the weather stays nice and cool too because I love getting to wear my comfy cardigans!

I can’t let stressful weeks get me down. Last year during holiday when I was working 30 hours a week at the mall, full-time at my analyst job, and working out a ton I had such a negative attitude. Before the week would even start, I’d look at my calendar and already get upset and stressed. Starting the week with the glass half full and a positive attitude is important. I’m the master of my attitude and my life. If I think the week will suck…it will!
