Happy Labor Day Dolls! I made some great mini frittatas for brunch today. Very easy and it was nice to have something different for breakfast. It was nice to use up the rest of our pizza toppings from Saturday night too. I hate letting food go to waste.
- 4 eggs
- 1/4 C shredded cheese
- Salt and pepper to taste
- Ingredients of your choice (I used pancetta, onion, and bell peppers).
Preheat the oven to 350 degrees and put paper liners in a 6-muffin tin. In a bowl beat the eggs and mix in the cheese and other ingredients. Pour into muffin tin (a little over half full), and sprinkle some cheese on top. Bake for 20 minutes. They’ll be nice and puffed up when they are done. Make sure you don’t over bake. Take out of the pan immediately and serve.
