Cookie Monster

What’s better than peanut butter? Peanut butter cookies! This weekend will be very busy at the mall because of a special coupon, sales, and we have a new floor set. In hopes of getting to work with happy people, I decided to bake some treats. If cookies don’t bring a smile to my co-workers faces, it’s hopeless! This recipe isn’t for those looking for instant gratification. The dough needs to refrigerate for at least 3 hours!

1 3/4 C all-purpose flour
2 t baking soda
1 t salt
1 C unsalted butter, softened, cut into 1-inch pieces
1 C granulated sugar, plus more for sprinkling
1 C  packed dark brown sugar
2 large eggs
1 t pure vanilla extract
1 C creamy peanut butter

Sift the dry ingredients together and set aside. Using the paddle attachment on your mixer, beat the butter and sugars together until fluffy. Scrape down the bowl and add the eggs, one at a time, beating until each is incorporated.  Add the vanilla and peanut butter and beat until just incorporated. Add half of the flour mixture and mix for 15 seconds. Add the remaining flour mixture and mix until just incorporated. Cover the bowl and refrigerate for at least 3 hours.

Preheat the oven to 350 degrees. Drop the cookie dough onto the prepared baking sheets, at least 2 inches apart.  Roll the cookie in sugar before placing on the baking sheet  and bake for 10 to 12 minutes. These are nice a crispy on the outside and chewy on the inside!
