Thank Goodness It’s Fall. The leaves are changing. It’s puffy vest and scarf weather (well not so much yesterday or today). And it’s slow cooker weather.

Slow Cooker Applesauce:

  • 4 large apples
  • Juice from one lemon (about a tablespoon)
  • 1/2 t cinnamon
  • 1 T brown sugar
  • 1/4 C hot water

Peel, core, and cut up the apples. Put all the ingredients into a 4-quart slow cooker and cook for 4-6 hours on low. Mash with a fork or potato masher.

Mom’s Chicken Noodle Soup:

  • 2 chicken breasts, cooked and shredded
  • 2 C carrots, peeled and chopped
  • 1/2 onion, chopped
  • 1 49 oz. can of chicken broth
  • 1 12 oz. bag of frozen noodles

Pour two cups of chicken broth into a large saucepan and cook the carrots and onion for about 10 minutes. Add the rest of the broth, the chicken, and noodles. Bring to a boil, turn down and cover. Stir occasionally until noodles and carrots are cooked. Enjoy with delicious bread. 🙂

I had a big slice of sweet potato bread with my soup.
