So many bloggers make some delicious looking macaroons. I’m constantly craving Gina’s macaroons and I’ve never even ate one before. They just look like roon heaven. The other day, Julie from Peanut Butter Fingers made some yummy looking macaroons too. I finally broke down and made a batch.
- 1 1/3 C shredded coconut
- 1/3 C sugar
- 1/4 C slivered almonds (I crunched these up further)
- 2 T all-purpose flour
- 1/8 t salt
- 2 egg whites
- 1/2 t vanilla
Mix the dry ingredients in a bowl. Stir in the egg whites and vanilla. Spoon onto a greased or parchment lines baking sheet. Bake at 325 degrees for 18-20 minutes.
For lunch I heated up some sweet potato bisque and had a multi-grain roll.
Now I’m off to deep clean my apartment. It definitely needs it.
